    Well they do say we eat with our eyes first. Damn think I actually understand what and why the SCA have it set up the way they do. Although I love my grill grates for steak still want as much flame and fire in contact as I can, as hot as I can.

    Good luck tomorrow I am sure you will do fine in competition. Although I expect you to win first place :thumbsup:

    Last week for the photography challenge it was fire. I grilled and ate a steak damn near every night LOL, right at dark. Took me awhile to get what I was after and didn't hit it until right before the deadline. You only have so long to work with the sear. 10 sec. manual exposure.

    Got beat out by marshmallows on a stick which is OK with me, like I said learned a lot from playing around. And his picture was much better than mine.

    Yeah they do work to add flavor that you don't normally get without them. Sort of like cooking meat directly over a fire and letting the smoke from the meat juices impart the flavor as much or more than the wood smoke. Pretty much the same as running a PBC or UDS. Or WSM with a stacker and roti. Best damn turkey I ever made.

    i did the same thing looking back :rofl: was too hard from phone to quote it all.... :thumbsup:

    But I will say that Turkey looks good and I wanna see the finished briskets... cause teasing isn't fair... :bananadead:

    Not at mine, I went by this evening after reading your post, expecting to stock up. $1.49.00lb here. Went to my local chain and picked up a few at $1.29.00lb. But it’s football season!!! I’m doing a cook for a small gathering at my Sis’s house.

    Just prepped 30 lbs :laugh:.

    Last year at People's Choice we planned for 200 samples and we ran out. This should be in the neighborhood of 300 samples.

    Lightly rubbed, then vacuum sealed. We'll make sure they have plenty of Meat Massage before they go in the drums :D.

    In deference to our recent Negative Nancy I threw a chunk of apple wood on my weber when grilling/smoking my ribeye tonight. Seared it on grill grates then closed the vents down, moved the ribeye off to the side and smoked it for awhile. That should make him 50% happy (it's still a weber). Damned good steak.

    Wings 2nd time this week, can't believe I am steaked out but after last week needed a break. Going to make a Costco run tomorrow though and change that.

    Couldn't fit them all on the grill and have the rest cooking now. Still have blue cheese and celery on the plate, time for another round of wings.

    Surprisingly even though cooked at high temperature for an hour with wood smoke the Myoglobin will cause a pretty decent smoke ring on the wings.

    I actually ate some wings today from a fairly local chain Zacksbys... very mediocre at best, but I haven’t had wings in well over a year. Still trying to do better. That being said, I’ve been diagnosed with prostrate cancer... WTF? I’ve worked my ass off (literally) just to be hit with this shit. So I said fuck it and ate something good... well unhealthy at least.

    Well fuck is right, and am so sorry to hear that. Damn it. Fight is right, and will power.

    I moved to Mn. because my father died of cancer and a head hunter contacted me right afterwards to come here. Figured I wasn't smart enough to cure cancer but could help support those that might find a cure. I retired from the Navy and was living in Asheville, NC at the time. No sane person moves from Asheville to Mn. Unless there is an ideological reason.

    World of research sucks is full of politics, begging for grant money, could go on forever. So ended up supporting those that took care of those who are sick and trying to get better. Then a couple of years ago my youngest son developed Advanced Stage IV cancer. I asked if I redacted his PET scan information if I could post it. He agreed.

    Image on the right is when it was full blown and they didn't give him much chance to live. The one on the left is after chemo and treatment. A normal PET scan. It came back but is now in remission again. Moving here to work at the No. 1 ranked hospital in the country has paid off. And I'm not talking financial gain.

    You need to fight with every ounce of energy you have. Something research hasn't been able to show but I've seen it enough that positive mental attitude has the most impact on results. Most oncologist will also tell you that. But you still have to go through treatment.

    If you ever want to talk send me a PM and I will give you my phone number. I'm pulling for you. You lost all that weight and are trying to live healthy and now this, has to be frustrating as hell.

    And the wings aren't as bad as you think. The whole heart health thing is still in debate and many of us will tell you it is upside down. There is enough evidence for it. But cancer doesn't care about that. Or age. Or anything else. Kick it in the balls. Oh and if you ever make it to Mn. promise that I will make you the best wings (at least Buffalo style) that you have ever had.

    Well F*ck. I'm sure you don't need to be told, but just in case, fight hard. @Cold Iron is right. I'm not in the medical field, but I've seen both. Some one basically just throw their hands up and went down hill fast and someone else that came back from vary little hope, but refused to give up. Take cancer by the collar and tell it "not in my house" then beat the living shit out of it!
