    Its not cooked there. It dry aged for 12 or 13 days after 10 hours completely covered in salt. They bloomed a deep red while cooking but then browned like steak once they finished. I would guess the odd color comes from using red meat to attempt this instead of pork

    jeebus. its like a jeep and a swiss army knife! is that even safe? wonder how many times they've been pulled over for "unsecured load" hazards? If i get pulled over 3 times in 2 months for just an RTT these folks have to be getting pulled over daily!

    Just checking. This was ...6... years ago when I first got the tent and no one else around here had one. The police didn't know what it was and kept pulling me over thinking that it was held on with just the two nylon straps that go over the cover. Once they saw it up close and realized it was bolted down and the rack was bolted down they let me go. I finally told the 3rd officer to please take a picture of my truck and post a bulletin at all of the local stations explaining that my rig was safe and not to stop me. He didn't but I didn't get stopped anymore after that either. :laugh:

    They had SO MUCH SHIT! It was spilling out of every cargo net and roped to every flat spot imaginable. Their trailer hitch luggage Shelf thing was just stacked with stuff, the stuff on the roof was lashed down with rope in a real sketchy way...I wonder how much stuff they lost!?
