    I thought of what's his name last night, stumbled across a show never seen before. Called BBQ Pitmasters guess it aired from 2009-2015 from what I discovered this morning. Harry Soo beat out 6 other Pitmasters to win $3,500 for ribs with his 2 WSM smokers. The others were running mainly custom stick burners that cost up to $12,000. Yeah rookies....

    Take a lot of charcoal without a second grate lifted and that causes it to get pretty hot when your doing indirect heat. In that case I would use the chimney to do the sear. Flip it over and use the bottom as the top. You would need a grate however or a section of grill grate. Or... make sure there is no ash or loose charcoal first and throw it on the coals to sear it.

    I buy the large containers of Chicago Steak Seasoning at Costco on my second one this year. Great stuff.

    After having 6 heat strokes and passing out more than 20 times of heat exhaustion from working in the propulsion plant of ships over 20 years have to agree with her. But it averages 20 deg. colder a day here compared to Upstate NY in the month of January. But it is a dry cold, because it is so damn cold the air can't hold any moisture LOL. In the 80's this weekend and humid too much so for me to grill or smoke but might later this evening. In 30 days or less it will freeze up. And stay that way until at least April often May. I'd rather grill in the cold than heat. But am getting old enough a happy medium sure would be nice...

    Sadly always been that way. On the West coast when Western Pacific deployments occurred they were called West Pac Widows. One of those things many don't talk about but it is a reality. I am sure to this day.

    It happened at Bragg and Campbell too, but I heard Drum was the worst. :notsure:

    It DOES take to to tango, so the soldier is not entirely at fault. My biggest problem, as that the so called "command" did nothing. :annoyed:

    As I work for the Inspector General, it takes elements of proof to prosecute for adultery. But with some evidence inappropriate relationships can be used. But some commands just do not look into as others do I will say that.

    Yesterday I decided to do a tri tip instead of ribs.

    It was a very good decision. Just got done eating up the leftovers.

    Costco prime grade is far and away better than the stuff I get at the grocery store here without any grading. Cheaper too, just farther away than I like. Next time I’m getting 10 of them and freezing them. Looked at cap steaks and just can’t afford them now.

    Prepping the kettle for some brisket burgers, found this little guy in my charcoal/wood box. Trying to hide I suppose, he changed from a bright green to a dark muddy green.

    So what did you think of the outcome with the tender quick? Was that something the marinade required? I've only used #2 curing salt and never done chicken with it. Yet.

    I wouldn't mind picking up one of the sausage makers smokers someday, one for jerky and another for smoked fish. Spendy although they are worth it from what I understand. Spendy might be an understatement.

    There's been an abundance of them lately....maybe cause the wet weather. :notsure: So much so, that in the early AM when I walk out for work I have to watch to make sure I don't smash one of these smaller ones on the driveway.

    Yes, the closest is in Anchorage. 220+ miles and about 4 hours of driving if you go the speed limit and there’s no construction or traffic.
