    When grilling you want your charcoal to be all hot and going....but, when smoking, I just get the coals where they will keep burning on their own and then put the lid on with the vents set. Bring the temp up (by adjusting the vents) slowly. If you overshoot, you'll have a hard time getting everything back under control.

    Before we moved back to FL my wife showed me some video from Facebook. It was two big snakes hanging from someones attic opening going back and forth at each other (no idea if they were fighting or mating). I was like OH HELL NO. I would just have to burn the place down.

    The video was excellent. Did you buy the small, medium or large version? It looks like my grill can handle either one.

    Meant to ask, what grate temp are you cooking at? I usually do mine around 325 on the egg, but I'm new to the vortex.

    I bought the one for the 22in weber and it works great for crispy chicken and reverse sear on steaks. I can easily get the temp with the vortex between 500 and 600 degrees and without it my grill is usally at 350 degrees.

    I always do butts for parties. Cheap and can easily feed a lot of people. Doing this for a work party. Beef ribs are for dinner lol
