Chop up bacon and in cold pan




Cook on med-High heat





Cook til bacon foam forms and bacon is nice and crispy





put in bowl with paper towels to drain





Pour out all but a few Tbsp's of bacon grease... and that fond...





Add the RBP, Jalapenos, and Onion and saute for a few mins




Paper towel to drain




add veggies and bacon to beans, spices, pineapple and rest of ingredients




stir it up good




Oh yeah....







For the Mac, I love the large elbow with the ribs




Hand shredded cheese.


1.5 cup Colby 1.5 cup Extra Sharp 4 cups Tilamook medium cheedar




stick of butter and flour roux with spices





5 cups 1/2 and 1/2 (cold milk + hot roux = no clumps)




10 mins stiring on Med-High heat to thicken. Coats Spoon




add the 4 cups cheese




stir and add cooked noodles




1/2 noodles, 1.5 cup cheese and 1/2 bacon




rest of noodles, cheese and bacon. Top with Rub (PF Spicy here)

And the pork butt... S/P/G base topped with PF Spicy...







Ready for manana now

Trying to up my posting game

 

Pork butt on @190° . need to stretch this cook all day as I'm at work. will bump to 225 at lunchtime.

 

I'd have to do a lot of cutting, grinding, and 'convincing' to the keg to make it all work. A few parts are tack-welded in to place as well. I could possible make a kit, though .

This one was a huge hit at the golf tournament. Lots of folks coming up afterwards to grab cards, take pictures, and ask me questions.

 

Well by kit I meant all the parts you two would need to build it together. Box it all up in it's pieces and when she opens let her know this is her's to build and you will be there with the step by step and helping where you need to.

OH! I got you. I completely misunderstood what you meant. I thought a ready-to-assemble kit to send to anyone wanting one

That's a really good idea! If we don't build one before Christmas, then I'll do it that way. I like that plan.

Did up some North Dakota King Salmon. 18 hour brine, 4 hours to fan dry, 4 hours to smoke.

 

Honestly you could do that for down the road but I was thinking much more personalized for now.
