Well of course, the last thing you want is to be retaining bird poo for any length of time, do him a favor and expedite the processing.

 

Not sure how the bacon will work since it's "flavored" with a slather. might rinse off a little first so as not to burn.

But pretty straight forward method otherwise.
Cold pan
Add Bacon
Med to med-high heat
stir and cook tilfat is rendered a lot and bacon looks crispy.
It'll crisp a lot more after pulled from pot and cools too.

About 9AM this morning I saw a blue 3rd Gen at the Y (51st and 183). Looked lifted. Anyone we know?

 

I'm going to try and make some of your burnt ends this weekend while working on the car. Last batch came out pretty good so I'm hoping to improve this time!

 

Honestly the main key, I believe is making sure they are rendered a lot. So the initial smoke period at the appropriate length is main. I pretty much aim for 275*-300* and let them roll til they look good. could be 3 hours, some have gone up to almost 5. But in the end... as long as they are cooked, technically, they eat really well. I mean... it's bacon

 

The last ones were very good and tender but I want to play with the seasoning a bit. I used a pre made rub last time so I might try and make my own.
