This. Like dissolves like. Capsaicin is an oil-like compound (hydrocarbon) and the molecular structure looks a bit like a sperm. Because it's nonpolar, capsaicin will not dissolve in water because water is polar. Casein on the other hand, a nonpolar compound in milk and other dairy products, is attracted to capsaicin and envelops the capsaicin molecule and washes it away from your receptors in your tongue, similar to how soap washes away grease.

I also like good tequila (100% blue agave and not that Jose Cuervo trash) and will happily drink it as it's meant to be consumed: Sipped like scotch along with some sangrita and not shot... I just finished talking with a neighbor of mine nice older fellow.

About5- 10 mins in he says to me "Thank you for stopping to talk to me, its be over 10 years since I had a conversation this long thank you."

I could tell it made a big impact on him.
15 minutes later I had him in the shop checking things out.
By the end of an hour as we parted ways I saw a totally different person a glowing life.

As you know I'm always looking to sparking something up, reason is.. you never know when you can save/change someone's life.
