    Here you go Kevin, I took 2 of them out of the freezer the other day and ate one last night. Groundhog day...

    Wrapped in bacon. 2 pieces actually, and it is extra thick bacon.

    Kosher salted. I let them sit out to come up to room temperature for an hour to an hour and a half after salting.

    After searing I will move it off to indirect heat and load it with Montreal steak seasoning. This sucker is as thick as it is around. Picked up a bottle of Jameson this evening so don't expect anymore damn pictures :p

    Too bad you didn’t get more. What I’ve found about Costco meat is that their Choice ends up coming pretty darn close to almost everywhere else’s Prime.

    I agree! It's like they get first pick of the Choice litter. For steaks, they also tend to cut them thicker, which makes for a better steak.

    Canning tuna yesterday so relegated all lunch cooking outside. Reverse seared some flat irons and smoked some mac & cheese (one tin with bacon) and some pork n beans. Dumped one can worth of sugary sauce out & replaced with whisky. Added bacon. All good!
