Here you go Kevin, I took 2 of them out of the freezer the other day and ate one last night. Groundhog day...

Wrapped in bacon. 2 pieces actually, and it is extra thick bacon.



Kosher salted. I let them sit out to come up to room temperature for an hour to an hour and a half after salting.



After searing I will move it off to indirect heat and load it with Montreal steak seasoning. This sucker is as thick as it is around. Picked up a bottle of Jameson this evening so don't expect anymore damn pictures

Too bad you didn’t get more. What I’ve found about Costco meat is that their Choice ends up coming pretty darn close to almost everywhere else’s Prime.

 

I agree! It's like they get first pick of the Choice litter. For steaks, they also tend to cut them thicker, which makes for a better steak.

Had some spares that needed cooking before they go bad. Using the rack to get the Weber preheated for tonight's porterhouse . Ribs for lunch this week!

 

Canning tuna yesterday so relegated all lunch cooking outside. Reverse seared some flat irons and smoked some mac & cheese (one tin with bacon) and some pork n beans. Dumped one can worth of sugary sauce out & replaced with whisky. Added bacon. All good!
