what wheel size do I go? Advantages of 17" and the advantages of a 16" rim? I have stock 16" wheels on right now and I'm replacing them.

17 has a wider tire size selection than 16s. 16s offer better side wall bite for off roading due to more side wall compared to 17s

If you’re thinking of ever going to a 33 inch tire, the 17 has more p rated options. Seems all 285/75/16 are lt (heavier) tires if staying 32s the 265/75/16 can be had in p or sl load rating. I went with aftermarket 16s, but be careful in the front, the calipers ripped off the stick on wheel weights. Not much clearance (but enough) so they had to use hammer in weights on the inside of wheel which I was fine with.
