I'm about to have the Icono Stage 7 with Fuel Ripper 17x9, -12 offset, 265/70/r17's Nitto Ridge Grappblers installed in a few weeks.

Noob question, will I have any Rubbing issues on my Gen 3?

Probably not with that size tire. That’s about a 32” tire. You don’t usually start seeing any rubbing issues until 285’s. If so, you might kiss the cab mount. In the case, a cab mount chop can be done pretty cheap and easily.
