    This. About 4 years ago dated a lady that made and used a lot of veggie stock and honestly it was pretty darn good. She complained that she ate more bacon in the one year she knew me than she had in her whole life. But she choked it down just fine along with the other meats I cooked LOL. Anyhow since I stopped dating her started adding vegetables to my chicken when making stock pretty much all the time. If my health and allergies dictated it I could do the same without the chicken and don't think it would be too bad.

    Smoking a boneless turkey breast for the wife and I for Turkey day. Was planning on a simple SPG rub. Should I brine with a basic brine?? Seems boring, but often the simplest recipes are best.

    What say y'all?

    I’ll see what I can do. When I make chowder, I don’t use any broth, and it comes out tasty.

    That’s what I do with the chowder, with some added butter.

    To me turkey is one of those things that is kind of bland without an added boost. At least the white meat that is why I think many prefer the dark meat it has more flavor. I also use honey and oranges as a base for turkey but not everyone likes the orange taste with turkey I have found. I do not wet brine birds anymore but inject the heck out of them. And dry brine overnight with kosher salt then sit uncovered in the fridge I want it as dry as I can. Not sure if a boneless turkey breast even has skin though :anonymous:

    If I was going to do a turkey breast I'd do it the same way although I always spin birds on the rotisserie at least if they have skin on. Both of my sons like white meat and don't care for the dark. I have actually bought just turkey legs\thighs before for me to cook for myself. You've got me wondering about doing a turkey breast now. Could always pick up a package of legs and cook them in the oven with some veggies for gravy stock and pull the meat off them to eat. And I do like to play around with how I cook my food. I might try this, off to check the internet to see if anyone else has done a boneless breast on the roti.

    Tribal burgers for tonight.



    Granted, I have a small tribe.



    So....my work is easy.



    I deviated from the normal smash burgers and went with my backup-plan burgers that make good tight patties and will hold together on any grate....anytime...anywhere. Worked out well on the smallish grill that was already outside....and it was raining and I didn't feel like fooling with setting up anything else for smash burgers.


    Backup-plan burgers are simply two pounds of 75/25 ground with a packet of Lipton's Onion Soup Mix shaken into. Simple. Easy. Tasty as far as we are concerned.

    That little Weber Smokey Joe is the best grill money I've ever spent. Loaded with some Kingsford blue bag I can bring back some real deal no kiddin' childhood memories to the table. Love the flavors.

    Tossed some 1/2 strips of some most excellent Smithfield Cherrywood bacon into a small skillet for a proper burger topping. It was that, indeed...Proper ! I can't wait to make some Pig Candy out of a pack next time I fire up the smoker for ribs & such. Gonna dust it with Meat Massage and let it ride. Heck.....I may do it for tomorrow's breakfast !

    Some form of “chili” with beans. Not any “authentic” attempt so don’t go crucifying me for whatever may or may not be in “chili”. It was tasty and that’s that. :crapstorm:
