Wow! So many asshats in this thread no wonder the OP didn't come back.

OP, in case you read this it is pretty cut and dry. The way you presented the case you're not liable for one sorry penny. I suspect it could go something like this: you go to pick up your truck and they refuse to give you the keys unless you pay. That's where you call the police. They'll ask to see the work order. Dealership won't be able to produce something with your signature. At that time you get the keys and dealership will have the option to try and come after you but if they're smart they won't because it's throwing good money after bad.
Now on a moral level if I were you I would try and get the quote you've been wanting even after the fact and pay for the stuff that you would have authorized if you could go back in time. That's because I'm a firm believer in Karma.

Plot twist, OP is the autoshop and in a sticky situation because he did the work on someone else's car without their permission and now liable for the costs....

If it were me I would ask ahead of time for a line item cost for each add on. If the labor w was already part of the frame replacement that should be excluded.for example if you give them new cabs mounts no labor or parts charges because you supplied them and toyota is already covering the labor to disassemble and reassemble

States have regulatory boards for medical, legal, renters, insurance, etc. There might be someone to speak to at the state level. Or there might be a non-profit organization that can help - or at least advise.
