if he sends me the new pit we are discussing...

damn that is too rich for my blood. If gifted that, I'd cook it, but no way it could be worth that much more :bananadead:

Thing about Kobe and high grade wagyu... I like the taste of beef. With those you are eating rendered fat with meat scraps. defeats the purpose to me. I stick with the local "wagyu" which is at least more beef than fat :D

I've never tried the real Japanese stuff so I'm not sure what it tastes like. To be honest I've had very little wagyu in general, one in a burger and once at a Japanese steak house.

Neither have I honestly. Just fake branded Kobe a couple times in burger form and these American wagyu briskets.

No, not yet. My last Boston butt I went with mustard for a wet rub. I haven't grilled/smoked much lately.

Tonight's cook (not exactly smoker related) pork tenderloin brought to you in part by Weber. My wife got me a new thermometer.

I love the target setting, most people way over cook loin IMO. I pull at 140ish and let it “coast” through the 145* safe zone.

Don't mind the 0*s lol I think that was because I looked at the graph after I turned it off. The grill flared up a bit at the end but that gave nice crunchy bits on the outside!

I use my Jumbo Joe more than any other charcoal grill. This time of year especially lately the Genesis is getting a work out. With grill grates. But I do have the griddle insert and have cooked breakfast on it a number of times. And a lot of bacon. Yes you want the insert!
