I have some parts I'm selling and lots of interest that will require me to ship the items. How do you do this without getting screwed by a charge back or something similar? Whats the best bet, PayPal? Venmo? Thanks in advance.

I've used PayPal to buy and sell things in the classified section of this forum. If you want more protection, sell through ebay and pay their fee for your peace of mind.

Etransfer of full amount up front. No other options considered.

I have the items packaged myself, ready to be shipped. You can plug the measurements and weight into UPS, FedEX, and USPS website for a quote once they give you a zip code. That estimate is pretty spot on if your measurements and weight are accurate.

If it fits in a flat rate box, then I'll include shipping in the price.

I only take payment via paypal, up front in full.

PayPal, in full, up front. Do not use the "gift" tag, or whatever it's called, but DO be clear about whether you or the buyer are paying the PayPal fee.
USPS priority shipping - insurance is included up to X amount. Flat rate is pretty convenient, but slightly more expensive usually. It's worth it to me to NOT run around looking for the correct box, estimate the shipping cost, etc.
When negotiating the sale, take lots of pics of the items being sold, from many angles/perspectives. Send them to the buyer, but keep them for awhile, yourself. That way there are no surprises and you're both protected.
Above all else - communicate with the buyer - send them that tracking # ASAP.
    Finally, good luck.
