Way too much rain. I wanted to smoke a bunch for my mom and mother-in-law as they both love my cooking. But we are taking them both out instead.

Wife went to the grand opening of HEB today at home. No great deals but at least she was looking and thought about me. Picked up a brisket, butt and pork belly.

I suspect everyone is getting their Mother's Day cooks ready? I'll be eating airplane food with the wife and kids .

Headed home from Denmark starting in around 9 hours. Looking forward to getting back to the pits and doing some cooking!

I’m going to pull the trigger on a smoker and am strongly leaning toward the Camp Chef Woodwind 24” with a sear box accessory. My thought is having the sear box allows me to quickly run out and cook a burger in addition to the actual searing of smoked meat. I don’t see an option like that on a Treager. It also means I don’t need both a smoker and propane grill. It’s just my wife and I now and probably have time to heat up the smoker when the kids come over. I like the squared back of the CC vs the round back of the T. The only thing I can see I would like on the T is they have a model that you can control temp and such remotely via WiFi. I plan on buying a WiFi meat probe with the CC. Does anyone find the WiFi feature is so much worth it?

If you can live without it then it’s not a big deal. I think it’s a convenience but nothing that’s make or break for a sale. If one has features outside of it that you like more than the other I would let those drive your sales.

I use my Traeger often and so far there is not anything that I can’t cook or smoke on it.

Got a 10lb prime brisket for $3 something a pound at Sams today, and a 3lb cowboy steak. If it rains hard tomorrow, we will be eating the cowboy steak. If it’s not too bad, the brisket is going on. I may do it high temp to get done quicker, if I do it.

I had my smoker cranked up for mothers day. We are going to my parents tomorrow so I should bring good grub.

First off sorry but my camera would not focus tonight.

I knew the brisket would take a long time so I put in a couple of Bison burgers for tonight. They only take about an hour to smoke and make regular beef taste like dog food in comparison.

I also regularly see guys making beans in their smoker so I had to do it too. Beans with bacon and red bell peppers. Mom's going to love this.

And what will make mom proud she had me? (there are so many things, but for this day) that I can make a brisket so mouth watering that any cooking show host would make me ritch to get this recipe.

Almost done (180* or so) many probes because I was testing the smoker itself.

At 1AM I cut a slice to test it out and I have never tasted any kind of meat as good home cooked or in a high end restaurant. From California to Texas.

Even reheated mom you are going to love this.

Here’s a better pic. This has to be the biggest piece of meat I’ve ever smoked. Makes my 22” kettle look small.

Got up at 5 to determine the plan for today, pouring rain. Went back to bed. Looks like pizza delivery for dinner.

Made some PBBEs for a shindig yesterday. 3.5 hours at 265 with post oak pellets. Flipped halfway. Glaze was butter, brown sugar, honey, and chili lime Cholula. Went with what I had in fridge. Rubbed with pitface spicy. There was a real good balance of sweet and heat this time. I used much less of the glaze interesting this time. Worked out pretty good I think.

I set out on my pellet grill buying journey thinking I too wanted a dear box for convenience. I’m only a couple cooks in on my geeen mountain grills jim bowie, but I have not missed having a sear box whatsoever. Just cook to whatever temperature you want and then crank the heat to max and you can get some good char. Having said that, my grill does have WiFi and there are seem to be some mixed reviews on that but I personally love it.
