    Looks like tomorrow is smoked meatloaf day. Was going to do it today but the real feel temp was 106 so that was a whole lot of HELL NO for me. :rofl:

    Supposed to be a little cooler tomorrow. Figure so the loaf and maybe some smoked baked beans. Then that means Tuesday is Meatloaf Sandwich day. :drool:

    Pulled pork was well received this afternoon. Didn't have nearly enough for everyone, so I’m doing another tomorrow for close family that missed out.

    The prime rib I had to smoke wasn't fully thawed, so the outside reached closer to medium before the inside was finished. No worries. Still delicious!

    Through the stall, finally! Probes at 176, 182, 196. 8pm now, beans for supper I guess. Wicked baked bean recipe is damned good! I'm going to pull the brisket when it probes good. Then wrap and into a cooler until the morning. Just glad I didn't have guests, I would have run out of beans, and alcohol! :annoyed:

    We did burritos and I loaded mine with beans. My little girl looked at me a little while ago and said we shouldn’t have let you eat beans daddy. :rofl:

    Excellent. Surprisingly enough, it turned oit very very well. I let it rest about 20 minutes or so before cutting into it, while i made my sides, just simple shells and cheese and a baked potato, but was all
    Well worth it.

    10pm done at 203, probes nice. Wrapped and in a pre heated cooler. Let it sit all night or not? It's sleepy time for me, now. ?

    If it's a decent cooler and you keep a couple towels over the brisket, it'll hold for a long time.

    When are you serving? I've held 8 hours before in similar conditions and the brisket was still hot when I sliced.

    Thanks for the quick reply! I'm serving me and the wife when I get damned good and ready tomorrow. :) I'm just concerned on how long I can leave it before it falls in temp too far.

    Do you have a thermometer with low temp alarm? If so, set it at like 155 or so, and put it in the cooler.

    None....yet.
    Nothing wrong with putting it in the oven on like 250-300 depending (wrapped) til it comes back up to temp. It'll keep all the goodies, and most folks wont be able to tell

    Good idea, and I do. Will it wake me up? Doubt it :( I usually get up around 3am to pee. Or 1 and 3 and 5 :annoyed:I may just put in frig at 1 of those times.

    Hickory smoked (rare) then cast iron seared tomahawk steak for the wife and me. Can’t believe this would cost around $100 at a restaurant. Came out delicious.
