    ***WARNING***

DO NOT TRY PITFACED BBQ RUB!!

    Why? Ill tell you why.

My ribs and brisket came out so damn delicious that its ruined any bbq place for the rest of my life.

The rub is straight pitfaced. The sauce I made was hella pitfaced, some other rib rub I had (didn't wanna use up all muh pitfaced), some fresh watermelon juice, and a little water. I poured it over the ribs every once in a while as they cooked. NO SAUCE NEEDED!! Everything came out super juicy and very balanced between the trio

Smoked sugar is just as easy as smoked salt. Salt can be smoked cold or hot but I tend to cold smoke sugar. Basically just fill an Amazen tube and let it go the whole tube. you can make any "flavor" you want.

I've smoked a lot of things - flour, granulated garlic, granulated onion, ranch dip mix, salt, pepper corns, cinnamon sticks, paprika, white sugar, brown sugar, turbinado sugar, water, vodka, cheese and on and on and on...

If you see smoked salt in the stores, it's all the same color... I feel like they just sprayed it with liquid smoke or something. I use a stainless steel screen to smoke salts and sugars (especially turbinado sugar - the others can go in a pie tin or something similar) and stir it every so often... clearly it's very inconsistent in color. Never going to get that boring "painted on" look I've seen in the store.

Because of the higher melting point of the turbinado sugar, it tends to form a glaze when used in a rub.. and it doesn't turn black or burn like a brown or a white sugar. When I am experimenting with rubs, I prefer the turbinado.

I've actually bought salt based rubs and then mixed it 50/50 with turbinao sugar to cut down on the salt and form that glaze that I mentioned above.

I just use some soapy water in a spray bottle and a Scotch Brite pad... works wonders.

My wife likes the OG PF run the best. It’s funny over the years as my cooks have improved we’ve gotten to the point where we go to a BBQ place and we are like eh, better at home. Even my in-laws are like yours is better. Now them they may be being nice but my wife won’t pull punches if I make something crappy she’ll flat out tell me.

I think since I switched to PF for our run it’s gotten even better. Sadly since we’re at the cabin today’s brisket that’s on the smoker is SPG for a rub. I was out of PF and let forgetting to order it to bring with me.

You’re forgiven then. Say 8 hail smokers and take another drink when you can and it’s all good.

I almost didn't, AC died 2 days ago. 85 degrees with heat index of 95 yesterday. So I worked outside all day as long as I was going to sweat might as well be productive. And sweat I did, drank a LOT of water and really wasn't hungry or eat all day.

Around 9 last night I got hungry LOL. Did Bratwurst patties and hamburgers on the gasser. Put PF on half of them, I seem to be putting that shit on everything anymore. And of course they turned out the best of course. The ones in front are PitFaced.

    4thGrillingPatties.jpg

Grilled King Hawaiian roll, slaw, onion, tomato and pickles. With chips I was hungry at that point.

    4thBurgerNbratpatties.jpg

Doubt AC will be fixed until next week I find out tongiht. Not sure if I will get a smoke in for the contest or not.
