need help with tires and rims

    stock for now, 5100'a all around with 885 coils and 2' aal in rear, light racing uca's and m/t sidebiter wheels 16x8, and nitto terra grapplers 285/75/16 in the spring
    i've got a couple questions about some tires. here's what i'm getting:

    pro comp 7005 17*8 wheels
    5100 shocks all around with ome 884 coils and an aal in the rear

    so here's my questions.

    1 what kind of offset would be good, i dont want the tires to be sticking out past the fender

    2 what size tires? 275/70/17 or 285/70/17, for some reason the 285's are about cheaper??

    any rubbing issues with either tire?
