    For a couple of hours then pull them, apple juice spray butt and wrap it for ~3 hours. Bark is coming along nicely at 280°

    I found a deal I couldn’t pass up on a smoker with good reviews on Prime Day so I hope to be posting up some pics of smoked goodness soon as I figure out what I’m doing. Waiting on the smoker to be delivered today.

    From what I read Step 1 is to season the smoker. Depending on what time it arrives that’s happening tonight or tomorrow. Seems pretty straight-forward.

    I went with the Cuisinart COS-118 18” Charcoal Smoker. Definitely not the Cadillac of smokers but hopefully something good to learn on.

    Went 280-290 most of the cook and wrapped it last 3 hours. First time I've wrapped a butt, normally I just push through the stall.

    Planning to pick up an eye round roast tomorrow and try to make my own roast beef for sandwiches this weekend. Anyone done one of these that might have any tips? Seems pretty straightforward from the recipes I've read so far.

    This is maybe a bit OT, but here goes.

    Q: Is a food probe accurate at reading air temps? They have pointy tips, air probes are blunt.

    I asked a similar question on the GMG owners FB page, and the post was closed by a mod after 2 replies. Wasn't any politics or tits in my post either. :)
    My Inkbird has 3 food probes and 1 air probe. They all read within 1f of each other at 32f ice bath, 74f laying on the counter, and boiling water. So, if I use a food probe to read grill grate temp, would it not be as accurate as an air probe? They are all thermistor sensors, as far as I know.
    What do you guys think? I've googled the shit out of it, still no definitive answer.
