    Just to make sure.

Your truck runs fine then suddenly it overheats to the red line.
You turn it off then restart it and it is ok again. And now it is cold and blowing bubbles into the overflow tank.

One you are low on coolant.
Two you probably have a blown head gasket.

Check the oil to see if there is water in it. If it looks like milky goo then it has coolant in the oil.
Check the coolant in the radiator to see if it is oily.
It may just be dumping the coolant into a cylinder. Take out the plugs one at a time and see if one is cleaner than the rest.

Get it checked for compression and leak down test. Or get a kit that checks for exhaust gases in the coolant.

Or thermostat stuck closed on initial then opens when super hot - easy to replace.
    Or radiator getting clogged up.
So if you ruled out stuff from the above post then:
Pressure test the cooling system looking for any leaks (most stores loan the tester) and if OK, flush the entire system opening the 2 block drains, replace thermostat and radiator cap, and add coolant. I would do all of it so you are done 1 time not a continual hunt.
