I want to build my truck towards an overlander. I'm starting with suspension right now.
Should I do a level or a lift? How high is really necessary?

I was going to do a level to begin with, but would a lift be better for future mods? (MOAB 2.0 front bumper, Bushmaster 2.0 rear [possibly tire swingout], Leer 100XR cap). Those are some of the things I forsure want to do.

Any tips or knowledge would help! I am new and know very little to this!

I would suggest looking at rebuildable/tunable shocks. This will allow you to adjust height and valving in the future when you start adding bumpers and accessories. Also suggest not going taller than a 3-4" lift.
