    Ok. Just got done with my first brisket as well. Here are so pics of the process and the sandwiches for lunch today. Wasn't bad but little bit dry. I need to get a new wireless probe thermometer. Any suggestions?

    Edit: Sorry for the terrible lighting and pictures. I was in too much of a hurry to eat a sandwich.

    I saw them referred to as Kalbi, too, when looking around. I bought them from a butcher shop near my in-laws' lakehouse. I saw them in the case, asked the guy what they were, then bought right away. Figured I had time to learn what to do with them - all I knew was I like that meat cooked as traditional beef short rib.

    This marinade was oil, soy sauce, teriyaki sauce, garlic, black pepper, onion powder, lots of Worcestershire, and some lime juice. No recipe, just stuff that sounded good as I went along :laugh:.

    I was pleasantly surprised at how they turned out!

    It's such a great cut. The only slight bummer is that it is such an uneven steak (given it is pinwheeled around itself) that something usually gives on the "doneness" scale. Ended up overdoing the inside of this one slightly, but it is such a tender and flavorful cut that you can easily get away with it.

    Hit any Korean BBQ place and you will see Kalbi on the menu. They do a quicker cook on them and the connective tissue is tough. I bet a low and slow cook with a sear at the end would be great.

    In Hawaii thats the thickness they normally sell it . Any were from 1/2 to 3/4 is the norm
    . The kalbi is marinated in kalbi sauce either home made or store brought . The whole slab I have not seen yet here . Hawaiian (rock) salt with black pepper is the way I like to make mine .
    And yea connective tissue is tough because it cooks fast .
