    Always love when a companies customer service goes above and beyond. Makes them new customers and keeps current ones. In the tech industry I’ve stuck with Logitech for MANY years because of their customer service.

    Yes! It would have been so easy for them to say 'sorry your order shipped, buy the other one and pay shipping to return the first one'. I would rather pay a bit more for something knowing their customer service actually cares about people

    I pull at 180 no more than 190 to cube. When I pull it put it on a cutting board with a drip edge around it because it is going to get juicy. I let it rest for at least 15 minutes before slicing it and seems to help some.

    With veggies underneath I don't season them first. I let them cook in the dripping juices then use a strainer like in the picture. Carrots always seem to be the best, to me. I will take some of them especially onions and celery to make gravy with the juices. OK now you have me hungry! I also do the same with birds on a spinning stick.

    Potatoes are always an issue so I first cube or quarter them and nuke them for about 10 minutes first. Could parboil them I guess but don't think there is much difference using them like this.

    I tell software vendors if I grant them a meeting I have only 2 requirements. Must satisfy our needs and satisfy our architecture requirements, and work. And when it doesn't work then it has to have great tech support. None of this we will call you back when we get around to it.

    Haven't had to do hardware for a couple of decades now. Couple of nights ago ended up running into town to Best Buy to pick up another Logitech K800 wireless backlit keyboard. They are sensitive fragile creatures and I end up buying at least one a year for personal use as they eventually get possessed LOL. Wish they would finally build a decent upgrade to it but like a moth to a flame...

    Have you called their tech support? I can’t tell you how many times they have sent me a replacement out of warranty. I’ve never even had to ask. I’ve called in to see if I can get replacement parts and they said we will send you a new one just keep the old.

    I tried razer move for a little while absolute crap customer service. Both times I tried them the mouse would die within days of warranty being up and they wouldn’t do anything about it. Went back to Logitech.

    I had the wireless one, I just can’t give them anymore more money. After buying two and both crapping out just after warranty I gave up. Went back to a Logitech gaming mouse.

    The vegetables underneath are a great idea. I will probably have to wait until I get an upper rack for my Jim Bowie until I can accomplish that though.

    I’ve got a Logitech wireless gaming mouse but I only use it for work laptop now. I have an Anker gaming mouse that I love. I just put my PC desktop back up and started playing again

    So everything clicked just right on this cook for once lol. I got the pig delivered on time and it was just like it should be as in we lifted the bones out and basically it was silky shreddy pork soup in a skin bowl.
    More to the “point” this was only like the 2nd brisket I’ve ever done that I was proud of. I’ve never gotten a slice of the flat to do this before:CFCDA5FE-CF23-48F4-B660-A0BE655C95CE.jpg
    Totally unwrapped for a 16 hr cook at 225 with hickory and cherry logs. Then it spent like 7 hrs wrapped up in the cooler. Still steaming when I sliced it lol.

    My only regret is that I got my unicorn rub one day too late to use in this cook. Next time :)

    Morning everybody!

    I was hoping to get some advice from all yall.

    I will be making a 13.31lb brisket. I want to have it for lunch/dinner tomorrow.

    How do yall recommend I smoke it? Can I smoke it starting at midnight, pull it out at 8am and rest it? Or will 8hrs be too much for a 13lb-er? Would I need more time? Should I pull it out, wrap, and heat for another few hours? Should I just smoke it 12am-10am then rest it? Any help is appreciated!
