    Edit: it was delivered by USPS. Lazy mail carrier jammed this thing in my mailbox on top of the mail hanging halfway out, door wide open instead of walking 30 feet to the front door.

    Have a 11lb (probably about 10 after trimming) pork shoulder. How long should I expect it to cook. Going low temp 200-225

    I haven’t used them but been thinking about their full charcoal pellets. Wife likes some steak on a charcoal grill.

    Tried to get a brisket, they only had a 20lb’er. Can’t fir that on my smoker.

    We gonna work in the shop tomorrow installing some new cabinets and going to cook also.
    Prepped the Pig Shots and Pork Belly Bites
    Slicing cheese, smoked sausage and onions

    Built the bacon cups. Wrapped bacon around sausage and pinned. Dropped a piece of cheddar in.

    All finished with onions on top

    Built the pork belly bites also, rubbed with pit face spicy rub. All ready for the smoker

    Got two pork butts ready also.

    Was looking at the extension ring from cajun bandit. Just haven’t got one yet. If i did, i could hang it.

    I don't own a pellet pooper but have been playing with pellets and smoke trays and tubes on the gasser for when it rains and winter.

    Started with these and used both tray and tube. They are for flavor and specifically say not for heat in pellet grills. But expensive as hell.

    Used JD last weekend and did a small ham, Italian sweet sausage, peppers and onions.

    Wrapped the ham with butter, brown sugar and honey for an hour and a half and was tender as hell. Still deciding on the whole pellet thing, though it was damn good.

    Last weekend shot 5 stand at a place that had a Runnings Home and Farm near it and picked up a 20 lb. bag for $8.99 of the Lumberjack competition blend. Pretty high reviews on Amazon figured for the price WTH worth a try.

    And did a $50 a lb. Wagyu ribeye with squash and bacon wrapped asparagus with the lumberjack pellets competition blend.

    IMO the Lumberjack pellets were just as good as the much more expensive pellets. But not using a pellet pooper so may not be of much help to you.

    I'm still not convinced on the pellet thing but they are convenient. Not thirties below zero or raining right now. So snake and wood chunks are my preference.

    Started at 4:30 today and still going to be awhile before my simple meal for supper is done. But I know it will be worth it.

    Probably right. I dropped hints for my bday, and she tried, but they were back ordered.

    Today, I just dropped $200 for kids school clothes, $100 on wine for the wife, and $320 on a gun for the kid.

    Maybe next month.
