Some call it the tail of the ribeye also. I save it for the end, it is the reward for getting through the "lesser" meat

Got the “easy bake” fired up, well plugged in. About to throw about 25lbs of butts on and go to bed. I’m cooking for 12-14 folks at a college football gathering. Doing ATB’s and buffalo beans as well. Have prepped the ABT’s, no pics until tomorrow.

Newb question, why do you slice them up prior to smoking?

 

Exposes more surface area to hold more rub and you end up with more bark.
