    I dry aged a brisket for 60 days then rubbed with on point two nights ago. The smell of it smoking on hickory brought all the neighbors by to ask what I was smoking.

    Fucking amazing. On point really brings out the dry aged flavor while adding a nice kick to the meat.

    I might need some info on your dry-aging setup, too. I need to get in to that process.

    I shoot for about 28 days. The Mrs. won’t touch it after that. Usually steak ‘n sea bugs for NYE here. Gave up goin’ out. Poor service, crazy prices & inferior food says it all.

    We have been doing 14-21 days. Makes for a great meal. We stopped going out a long while back for many of the same reasons. :)

    Beat me to it. This is what I use. Fantastic results. I started with a USDA Prime brisket and aged for about 60 days. I trimmed the pellicle that formed then slathered on Worcestershire sauce, rubbed with on point, then smoked it spritzing with apple juice from a sprayer as needed.

    By itself the rub seems like it may be too spicy for the kids. But, after a smoke and the Apple juice spray it was PERFECT for everyone. A little heat for those who like it and not too much for those that don’t. I dumped a lot on the brisket as you can tell from the photos.
