Excellent vid. Very cool slang and cook leaving the scales on "half shell". Maybe when we're down in Siesta Key in two weeks some place will have this as a menu item and I will know exactly what it is.

We had red fish in Nawlins' a couple years ago but it wasn't prepared like this. I prefer fish cooked with the skin on. More brine flavors.

That "throat" reminds me of cheeks on other game. How good would that be stuffed with a mix of lobster, scallops, crab and shrimp in a thermador or imperial sauce?!
