    I see you guys are eating nice and healthy grilled meats and veggies where as tonight we are having some fresh fried catfish with onions rings and freedom fries. I guess that’s why the doctors down here make a “killing”...more business for them.

    The easiest way to do it is to soak the filets in cold water for a few hours to get the blood out. Then marinate them in cheap Italian dressing for another 3-4 hrs more. Then coat them in Zatarain’s Fish Fri and fry them on 350F until they float. The thinner the piece, the better. We never have left overs when it is cooked this way.

    Spanish Mackerel has a lot of fish oil in it so it does not dry out as bad in the smoker
