    You mentioned that the inner meat wasnt 100% done. Could that be caused from not getting heat from the side and not turning? Traditionally its on a vertical spit with heat on one side continuously cooking until there is little meat left on the spit.

    Yes I’d say that could be part of it. Though the amount that was still pink was so small I believe with a little more heat at the same amount of time it would have been done throughout.

    I've done them with about the same recipe and found that I prefer to just hang the individual slices in my pit barrel cooker. I've also tried cutting the slices in half and stacking them on a hanging skewer similar to what you did but I was more impressed with the results of cooking the slices individually. I ended up with a little more bark which resulted in better flavor with the meat all chopped up.

    First time I did them hanging, didn't get a picture in the smoker.

    This is from when I tried hanging them. I feel like they didn't cook as evenly and took longer as well.

    On the other hand hanging skewers is the way to go for pork belly burnt ends in my pit

    I believe next time I’ll definitely just throw the slices on the grill individually. If I had a vertical spit and could just let it hang out as I slice, that would be ideal but that is sort of unrealistic.

    Just put this fatty in the fridge to set up.

    It weighs over 4lbs :rofl:.

    2 jalapenos stuffed with cream cheese, then smothered and covered with chipotle cheddar cheese, then encased in just shy of 2lbs of ground beef, then wrapped in nearly a pound of bacon. There is over a pound of cheese in that thing. :laugh:

    Now, I'll post up good or bad, but this thing feels like it's being held together by a prayer. I have a strong suspicion that it'll break apart on me during the cook. Tough to seal it up completely and there is a lot of cheese that will be trying to break free.

    We'll see what happens!

    Picked up a Pit Boss XL 1000 today. So I can get back to some smoking. Hopefully can assemble it this weekend. Got a good deal on clearance.

    Nope it's in FL at my in-laws, we headed north again and it was too big to fit into the trailer. My FIL is using it until we move everything. So wanted something cheap to use until then

    I was only kidding. I'm a pellet head for the most part. I got addicted when I scored a Pit Boss vertical under $300. All pellet stoves benefit by cleanliness, maintenance and moisture control.

    I never knew about the Traeger fires until recently.
