I'm leasing a 2019 Tacoma TRD and would like to set it up for truck tent camping for my wife and I. I'm about 6'2". She's about 5'10". The truck bed is only 5 feet, but the tail gate adds another couple of feet. So here are some ideas of how I could do this:
The tent: Right Line Gear Truck tent. Floorless design may accommodate folded up tonneau cover and add ease of set up (and save some $).
The mattress: the truck bed is 53" wide near the tail gate and narrows to 42" toward the front for the wheel. So a memory foam mattress (or two) that could be trimmed to fit this tapering, and can be rolled up when not in use. Here is one idea from Amazon:
BetterHabitat Sleep Ready Memory Foam Floor Mattress. [Twin, Single, Kids]. Solid Memory Foam. Roll Out, Portable Sleeping pad with Waterproof Cotton Terry Cover, Travel Bag. It's also long enough to extend out over the tail gate for our length needs. More expensive, but looks like it would be comfortable and could customize it for the odd shape of the truck bed. Inflatable mattresses boast of a wheel well cut out, but I've not seen any that are shaped like this truck bed.
I would also add a couple of moving blankets on the floor of the bed as an additional barrier..

I'm wondering if anyone has done short bed tent camping for two successfully and what your experiences have been. Am I on the right track?

I would save the money and invest in a used RTT. GF and I are both short, a 5 foot bed was super tight.

In my opinion a ground tent would be a better / quicker option then those truck tents. Some of the ground tents deploy very quickly.

Rent a trailer. If you find you still like camping, buy a trailer!

I've used a Napier Backroadz truck bed tent on my DCSB a couple times, and it has worked pretty well. Setup wasn't any more difficult than some ground tents, and I didn't really have any space issues (5'11").

Definitely need some kind of mattress. First time I thought the sleeping bag would be enough cushion.. and it definitely was not. You could feel the ribs in the bed. I got an inflatable mattress that fits the dimensions of the bed, and it works perfectly with the tent.

The Bed style tents aren't too bad if not interested in a RTT and don't want to sleep on the ground. I bought a Kodiak bed tent early 2019 and used it for about 14 nights or so this year. The kind of camping you do or are interested in doing will determine the kind of setup for you. If you're not looking to move around much once camp is set up, the bed tents will work just fine. If you want to be more mobile RTTs and trailers will probably be better, though at an increased cost. Plus being a lease you may not be interested in getting a bed or roof rack. For the Kodiak system I have a write up over in the Products Review forum (https://www.tacomaworld.com/threads/kodiak-canvas-truck-tent.611911/) The tent has held up well in heavy rain, heat and cold. I bought a 4x6 foam floor pad from the hardware store, cut it to shape on the bed like it was a bed mat. On top of that I have used moving blankets and a full size mattress topper. Wasn't too bad but definitely a hard surface still. Also used a full size air mattress which ended up being much better. A standard full is ever so slightly too wide for the wheel wells so I just slightly under inflated it and body weight will keep it tight.
    Any questions let me know.
Here are a few pictures from this year, the write up has some better views from the inside and set up:
