    I’m not trying to become vegan or vegetarian BUT I would like to maybe throw in a couple of plant based meals each week.

    For those of you who do this type of thing what are some of your favorite recipes?

    My wife does a tofu veggie stir fry that’s pretty good. It’s tofu, broccoli, carrots, tomatoes, and snap peas. It’s pretty good and I am person who basically will not eat veggies.

    I make a lot of my own lettuce wraps, usually in the morning. I will fry an egg or two and then wrap it up in some lettuce with cilantro and pico. Awesome breakfast and all good stuff that the body can use.

    For lunch or dinner, nothing beats a buffalo chicken salad.

    Eggs dairy and meat are not plant based but I like the idea of lettuce wraps

    Stir fry is the only way I can skip meat in a meal.

    We use rice noodles.

    Ah, gotcha! I also like to use plant-based drink mixes, FWIW. There is a company called “Amazing Grass” that makes some really great drink mixes/tablets.

    Spaghetti squash is so awesome. Great stuff.

    We eat mostly vegetarian. This stuffed green pepper recipe, using brown rice, is awesome.

    My wife has autoimmune arthritis issues and I was diagnosed with prostate cancer (low risk supposedly, based on genetic testing) a few years ago so we try to be careful with our diet. Lots of cruciferous veggies, legumes, fruit, nuts, etc. I try to limit dairy but it's hard to stay away from the cheese cause I love it.

    Also, look at vegetarian chili recipes. There's a lot of really good ones.

    3 inch lift and 33 inch tires, billet grill
    I'd stay away from beyond meat, it's loaded with Canola Oil which is oxidized fat. Just buy a Grass fed grass finished ground beef burger, wrap it in lettuce instead of bread and you'll get way more nutrients than any plant based options.
