im looking into getting 5100's and the 1.5 ICON progressive leafs and I originally planned for OME 881's but ive heard those would be quite stiff on the 2.5" setting. So i'm wondering if i should just leave the stock ones or which coils would provide the best ride at 2.5"? I dont have any bumpers or extra weight in the front.

    Mostly stock on 35s
Don’t run lift coils at the 2.5 notch. Get 2.5” lift coils and run them at the 0 notch.

881s would probably be what you want, 882s would likely lift you more than 2.5”. They would be fine with 5100s but you would install them on the 0 lift notch of the shock. This will probably ride better than stock coils installed on the 2.5 notch since it’s a longer coil with less preload.
