    I got an impromptu request for turkey on the smoker...kinda windy and cold but at least it will get a little apple wood smoke on it! I have a feeling it wont get to high of temp, I tried to block some of the wind but its swirling pretty good by the house. Happy Thanksgiving folks! Wherever you are!

    No turkeys for me, but i decided to smoke a couple chickens, and i never could find a review of smoking one with stuffing in it, so were gonna give a shot this go around. Dry rubbed them last night, wrapped in celephane, then foil, marinated them overnight. Put them in the smoker areound 9 or so this morning, will take them off around 1:30ish-2:00. Hopefully the stuffing turns out good, i know it will be smokey, but we like smoke, lol. Heres a few pics of it.

    This is a pit barrel cooker, so simple but does awesome. This is a sneak peak at 4 hours and 16 minutes of being on.

    Winds would be nice, we have sustained at 20-30, gusts to 50. Needless to say, but the hams are now wrapped and in the oven to finish. Went through what should have been enough coal for 6 hours, in three.

    yeah I just loaded it my smoker up...Going to have to finish in the oven for sure, but at least it will get some good smoke flavor in it...
