    On to a Devil Anse IPA from Greenbrier Valley Brewing in WV. A nice American IPA. It’s pretty clear but I don’t know if it’s quite bitter enough to be called a West Coast. No matter as I am enjoying it all the same.

    All I really know is green bench, j Wakefield, cigar City and I think that's it, but I know j Wakefield is in Miami. Not sure on the others.

    The lady and I went out to Yardhouse with the lil man in tow. Had the same Thermal Intake from bottle logic and it was again, not good. Malty, maybe oxidized, just generally old. She let me swap it out for a hazy from Clairemont and it was really nice. Just a lightly hopped slightly fruity pale really.

    Beer nerd buddy is visiting and we broke out the good stuff tonight.

    This is my new brewery set up. Even at 2.5 gallon batches, I’d like to move up to a 240v heating element but so far so good as is.

    Finishing this brew day on a high note. Overall, things went well on my new system. I got 2.5 gallons to the fermenter, so that’s a win.

    The recirc pump for my immersion chiller worked awesome. I just need more cooling water volume than a 5 gal bucket.

    This was my first brew with milling my own grains and I did some basic water chemistry. Looking forward to trying this beer.

    Sounds like a nice little setup and process you're pulling together. Water chemistry is the one I really haven't gotten too far into, but wish I could. I just read a bunch and get confused and frustrated and go with standardized additions.

    Nice lil set-up and I don't blame ya for wanting to move up to 240V. Makes it easier for sure... And I love Highland! They have been around a long time and, IMO, don't get enough attention. They make some really good beers.

    Curious about your water chemistry. Are you starting with spring water? I'm looking at doing a NEIPA and one thing they recommend is (to stay true to the style) to add gypsum or calcium chloride.

    I too get confused quickly when reading about water chemistry. I use RO water and go with the calcium chloride and gypsum additions that Beersmith recommends.

    Agreed, Highland is excellent. Their Gaelic Ale is a good beer to always have on hand next to SN Pale Ale.

    We have two 50 gpm RO units at work so I just go fill a 5 gallon water jug before I want to brew. Starting with RO (or distilled) makes water chemistry much more simple. I can’t speak specifically for NEIPA as I haven’t completed a successful one yet, but gypsum and calcium chloride are fairly standard additions for most beers. The style dictates how much of each. For this brew, I just went with what Beersmith recommended so we will see how that goes.
