Honestly have no idea how much it will make. Also gonna do 2 whole chickens for some friends that dont eat pork. Were just gonna make as much as we can until we run out of masa or theres no more meat.

Mom came up from Sacramento and we have a longstanding family tradition with tamales every year. Last year we did about 20 dozen elk and venison tamales. I should have saved more for myself... Handed them out on a friday to guys at work and monday everyone came back asking if they could BUY some more. We really just make them to hand out as gifts for the holidays from our family.

One year we had 3 families over to help make tamales. My aunt was selling a bunch for a fundraiser or something like that. In one weekend we did about 100-125 dozen.

Some Neighbors of mine are coming over and we're just going to do a big tamale cook. Way easier having multiple people help. And its way more fun when beer is involved.

For the pork or the masa? I have no idea what i want to use on the pork. First time smoking meat for tamales, every other time its been carnitas or cooked a different way.
I know I want to use a lot of paprika and chili powder. Probably a bit of cumin, onion powder, garlic powder. I might just wing it honestly.

Indeed it is. I love it. Now I won’t feel bad only doing 2 burgers or a single tri tip on this instead of firing up the bigger DB and having to use more pellets. Initial burn in coming very soon. Assembling the few pieces it needs now
