    Here are the pork belly rectangles. I used freshly ground pepper (there aint no sub for it imo), pink himalayan salt, and chupacabra cajun seasoning. How yall are?!

    Anyone have any suggestions on how to power my Davy Crockett if I take it camping? I’m thinking a deep cycle battery and just use the battery clamps to run it. Don’t really have the space or money to get a generator. Not sure what my other options would be.

    looking at the specs, a deep cycle battery should cover any cook with it. The ignition is definitely the highest current draw. If you want to be on the safe side you could always get a small solar set up to keep the battery juiced up.

    Just get a jump pack. It will have a 12v plug-in, 12v clamps for starting a dead vehicle, USB to keep your phone charging while you surf the internet while camping, etc. ;) Try it out at home, you still need to season your new DC, right?

    I do have a jump pack. Idk how long it’d last though for a full cook. Guess I could try it out.

    No I do not need to season it. Already did that day I got it!

    Haha used up the last of the Spicy Meat Massage I had on that one.. cubed up the rest of the belly to make PBBEs and used one of my own rubs ... Next time I might use the whole length of belly to braid and pay more attention to the width of the cuts to make a better looking braid.
    It smells so freaking good.. hopefully I can bring that back in the morning during the reheat!

    Also... I might have used the Chubby Rapunzel name on IG :rofl:

    Damn guys! The food turned out awesome. I could have made the brisket better by letting it rest outside the ove, but oh well, it was still a huge hit. The Misplaced Porkbelly turned out to be a yuge hit as well. I think I even liked the pork belly more than the brisket.

    For the pork belly baste I melted a stick of butter, poured in some honey, crushed red pepper, a dash of worchester cheetah sauce and a buncha red hot cayenne sauce. Once the pork belly was done I layered it in a small tray and poured some of the baste sauce over it. I then put the tray in the smoker for another 10mins. The temp was 325ish. It caramelized a little, but not too much. It could have been a little better if I hadn't left it in the smoker the extra 10mins, maybe if I would have pulled em out 15mins earlier, then let em glaze, but oh well.
