    I had two thick ass breast. I was about to wrap in plastic wrap and beat the shit out of them to flatten them out for even cooking, then it occurred to me to just slice them down the middle so I had 4 thinner breast. Worked like a charm for my chicken parmesan dinner.

    did this (and a few other things) in the AF tonite
    Some little tidbits from a deer I butchered a while back, I think from the bottom round. Garlic, coarse sea salt, and a few peppercorns ground up with some duck fat in the mortar and pestle. 400* for 8 min, got to 135 because I wasn’t paying attention lol



    right on :)
    u could butterfly them breastss pound em thin then stuff with fresh mozz and herbs or something roll em up even like then parmesanationalize em :eek:

    Roasted baby taters halved and smoked turkey sausage, sprayed with OO and sprinkled with garlic powder and parsley.
    400f for 10min on the taters, then added 2nd rack with sausage, 5min. :thumbsup:

    I made ham croquettes with my leftover smoked ham. Use FINE cornmeal filler, egg binder. Onion, jalapeno, cheese, a little carrot, some chopped spinach, some olive oil, salt, spiced to taste, etc.......mix had consistency of hamburger. Made patties and into the air fryer at 375°F, start checking at 8 minutes or so. WOW. Tasty!!

    Dredge the curds in flour then egg wash and then coat in bread crumbs seasoned with cayenne, garlic pepper and salt to taste. I cooked at ~350F for a few minutes. I didn’t do a great job of coating so they leaked a bit but they were delicious!

    Cauliflower florets, misted with OO, 400f for 9min. Then pulled, sp and parm. The cauliflower turned black on the ends, looked awful, tasted awful good. Cooked, but still a little crisp. Next run I will try a little lower temp.
