    Well, the fatty is wrapped in plastic wrap for the night. I will cook it tomorrow while I have the pooper going for a large porterhouse I picked up today.

    This was my first time doing a bacon weave so it’s far from perfect, but I am looking forward to this thing.

    I sautéed some mushrooms peppers and onions with some On Point and put them in there with some Tillamook Colby jack and some habanero ghost pepper jack cheese. This is also the first time I’ve seen Tillamook here in the Carolinas. That sure is some tasty cheese for sure.

    Weave looks good! That'll set up real nice in the plastic wrap. If you think of it, rotate it whenever you walk by the fridge. It'll help keep it from flattening out in there ;).

    Looking forward to seeing how it turns out! The stuffing sounds outstanding!

    We have always called the strips inside the cavity along the spine backstraps growing up. But living in different parts of the country it does seem to vary. Best part of the deer IMO and I always cut them out first. When still warm just pull them out actually. Traditionally cut them into steaks and butterfly them and fry them in bacon grease for breakfast the next morning.

    First deer my youngest son shot was so young it didn't even have any backstraps inside LOL. Almost gave him a hard time about it but it was his first deer so didn't. Now he knows better. And he can handle the gutting and dragging on his own now. Hell he can even do mine for me :)

    When I bought this house 20 years ago it had a Jenn Air oven and stove top. It must have been one of the first convection ovens and is identical to the one my mother had new in the 70's. The convection oven I replaced it with is almost twice as large on the inside as the old one, they have come a long ways. After having convection for so long I didn't want one without it. But I refused to pay extra for Wifi :anonymous:

    I have one of those also. Last week a friend of mine at work ordered an air fryer insert for his instant pot. Told him to let me know how it works out, not sure I really need one though. But would think the extra insulation would be better than the toaster oven which really is none at all. That sucker gets pretty hot on the outside. Probably the most used cooking appliance in the house though.

    The fatty came out great for my first try! My two issues were not enough filling and the bacon didn’t quite get done enough. Next time I will fill it more and cook it at a higher temp. I love chewy bacon but this needed to be a bit more done for its intended purpose.
