Thinking about leveling my 2015 Tacoma. I have heard good things about the Rough Country 2'' kit, but just wondering what everyone finds drives the best.

If you have plenty of miles on your rig, I would suggest buying new shocks. Bilstein 5100's is what I run and have them set at the 1.75" clip which gave me a right around 2".
If you drive all on pavement and your shocks are in good shape then sure you can get spacers. It wont be that big of a deal. The 5100s set at 1.75 will probably ride a little better than those spacers.
