I found a lot of recipes on youtube. But my fav is lettuce wraps. I make tacos but replace the shell with lettuce. Cauliflower rice with the beans instead of regular rice.

I went almost completely vegan for about a year at one point trying to treat my diabetes, didn't work for me. There are some things I still enjoy quite a bit like veggie pizzas, chilli, and especially black bean burgers

Take 1 Kaboucha squash, cut off skin, spoon out seeds, dice in 1in cubes, boil. While squash is still al dente (about 20 mins.), throw in package of fettuccine. Continue to boil until fettuccine is cooked. Strain squash and fettuccine. Return to pot, add a shit ton of pesto. Enjoy.

edit: I usually make my own pesto. Sometimes I use pine nuts, sometimes Mac nuts, sometimes almonds or walnuts. Sometimes throw in arugula and other herbs with the basil. Sometimes go garlic free. Sometimes add balsamic vinegar. Point being it’s fun to make your own pesto and you can switch it up to make it unique and fresh.

    Coconut curry.

    make brown rice.

1 can of coconut milk. Add your choice of curry paste, throw in a medley of fresh mushrooms like chanterelle, oyster, trumpet, maitake, etc. add other veggies like carrot, broccoli, onion, tomato, or my favorite bok choy. Squeeze juice of a lime in towards the end for a bright note of acid to balance the sweet of the coconut.

cook until veggies are al dente. Spoon over a bowl of rice, enjoy.

pro tip: make it as spicy as you want by adding sambal oelek red chili sauce to your bowl.

    Vietnamese burritos.

    Rice paper rounds
    Vermicelli noodles
herbs, herbs, herbs : mint, basil, parsley, cilantro.
Spinach leaves, marinated tofu, avocado, shredded carrots, green onions, any other tasty fresh veggies you want to get creative with

Prepare veggies that you’re using, Cook vermicelli noodles strain and set aside. In a pot of warm water, dip 1 rice per round until moist and pliable, use it as you would a tortilla and stuff it with all the fresh ingredients. Herbs are a must and a vibrant pop of flavor. Avocado is also a must for me.

Dip in a sweet chili sauce and enjoy.

Have you tried Keto, tons of people are reducing insulin injections and many are off it completely. A good Podcast is Two Keto Dudes and Low Carb MD

I’m guessing when you say treat you have type 2? My wife is type 1 and we ate paleo for 3 months and it helped with blood sugars and using less insulin. It’s just hers isn’t treatable of course.

We do the Wheat Belly. Dr. Davis is a cardiologist and seems to know his stuff.

Basically, no grains, sugar, or starchy vegetables.
Low carb...15 net carbs per meal.
    Moderate protein.
    High healthy fat.

Several supplements. Fish oil, D, Mg; iodine. Probiotic.

My blood work is getting better everyday.

That's part of my issue. Sugar is the only problem litterally. Cholesterol was spot on, Triglycerides dropped to 64, protein levels perfect. Cardo work up was beautiful. This new insurance has screwed with my meds and I'm not paying what they are asking for some of the new ones. Just the Trulicity was going to be $500 for 90 days. It'll all work out

Best of luck Casper...We all have struggles. Type2 is reversible, at least somewhat.

If you eat low carb then you want to eat High Fat. When carbs are kept low, by low I mean less than 100 grams per day but for Keto it would be less than 50 total carbs not net, your body shifts to burning fat/ketones as an energy source. Fat is a cleaner energy source than glucose and is actually preferred by the heart and brain. Doctor William Davis is a great source of information as someone else mentioned. Now when you ask your doctor they will likely say Keto will kill you and that's because they didn't stay up to date with studies and are basing everything they say off the World Health Org.

On this diet Cholesterol does go up for some and down for others, the more important numbers to look at is your Triglycerides divided by HDL which should be less than 2. For most it will be less than 1 on this diet. Also check your CRP, which in almost all cases goes down. It's time to be worried if your CRP is high and Cholesterol is high.
