Thank you! I'm sure the alcohol helps crisp the skin.. I just don't know the science behind it.
I used the Sake I posted a picture of above..but if she knows of a better quality one to use let us know!

i have a long list of sakes way beyond that one. but it's ok and good for cooking, clean and made in CA. for drinking, like other booze, you want the good stuff you pay to play. i don't go totally nuts but have a few approaching 100$/bottle.

The high priced ones might be a little wasteful to use for cooking... The wings were soaked in the Sake for 15 minutes and then disposed of... Couldn't imagine if it was a pricey bottle!

true. that one you posted, being clean tasting, is a great choice. you would never keep the subtleties going if you fry the money stuff! but for drinking they are nice. some of those have a hour+ finish like high end wine.

i keep seeing mentions of this and am trying to figure what it would take to convince my wife.

maybe a new ventilation system to start? my dad used to serve strong ass bubbling kimchee with a black & blue T bone. that was our boys-hanging-out meal back in the 70's. but convincing my wife? no idea...

...^^^... I am not a big drinker ... but I love good "hot sake". ...

The Japanese make the best rice wine sake and you can drink it before, during or after a meal.

I picked up some bone in goat meat that is cubed up for stew meat. I was thinking about maybe braising it with some root veggies, unless someone has a better idea
