    That event I did a couple weeks back at the whiskey tasting where I served BBQ? There was a guy standing there who was part of the tasting. I didn't remember him trying any of the BBQ, so I said, "Hey, did you get a chance to try any of the BBQ? I have pork belly and brisket." He looked at me (VERY nice guy, by the way) and said with a chuckle, "Do you have anything vegan?". I laughed and said that I couldn't help him there. His buddy goes, "He's got beans, too. Try those, they're awesome!". I said, "Can't do those, they have bacon in them." to which his buddy said, "No wonder they are so good." :rofl:

    6+ inches starting tomorrow night here. Just got the deck cleared off from the last round :annoyed:And planning on doing ribs for the first time on my Pit Boss Sunday. In the snow and wind. Uphill. Both ways :) Be interesting to see if it is any different then using the WSM or kettle for them. Good luck with the brisket!

    Lol uphill both ways. I'm sure the ribs will be great. How are you cooking them?

    I've never noticed much difference cooking in the cold unless it's below 20F. I'm sticking with my usual plan and starting 1 hr earlier just in case any hiccups

    Being a Pa. Potter\Tioga County breed, born and raised woodchuck we was always going uphill both ways! ;)

    Yeah 20° isn't bad that is warm here this time of year. But the cold hurts my old bones anymore. 20 above zero isn't bad, 20-30's below zero that changes and just plain sucks but I still smoke and grill then. Supposed to be single digits this weekend but at least above zero. But it is the wind that is the worst for smoking IMO.

    I got some welding blanket felt for the PB to help with the wind and cold and use rare earth magnets to keep it on. Works fairly well so far.

    Going to do the ribs totally different then how I have ever done them. 2 weeks ago got a wake call at a Doctors appointment and cutting all sugar out of my diet, I'm doing Atkins low carb. And no more than 2,000 mg sodium a day so no added salt still trying to get down to 2k sodium and it isn't easy.

    Not going to wrap them I only started wrapping about 4 or 5 years ago and adding apple juice when foiled. Don't want even that much sugar so doing them dry the whole time. Baby Backs so ~5 hours but may end up going 6.

    For the rub going to try this

    1/4 cup Golden Lakanto Monkfruit sweetener
    1 tablespoon smoked paprika
    1 tablespoon black pepper
    1 tablespoon onion powder
    2 teaspoons garlic powder
    1 teaspoons cumin
    1 teaspoons cayenne
    1 teaspoons cinnamon

    The Golden Lakanto Monkfruit sweetener is supposed to be here tomorrow. Supposedly works well as a brown sugar substitute even for smoking. Or so they claim

    Also coming tomorrow is some sugar free sauce. Gut instinct tells me it isn't going to be the same as Sweet Baby Ray's LOL. But willing to give it all a try.

    No baked beans or Mac N cheese cause carbs :pout: So thinking of cutting up some cabbage with Mayo for want to be slaw. Not sure yet what going to have with them yet still thinking that one through..

    It's funny you mention this, my next to last follow up, showed my PSA values were rising, again. Seems strange since just over a year ago I had my cancerous prostrate removed completely. Three months in, untraceable amounts, six months check, ditto. Nine months and its actually moved up, not much, but still trending the wrong way. The concern was the cancer had spread (through lymph nodes, which are abundant near the prostrate gland). Wednesday's labs were 100% (year mark) positive. My oncologist claimed that lab work can vary from lab to lab, and even day to day, WTF?
