not hitting max temp, controller “going to sleep” and letting fire go out, grease mixing with ash in the bottom and essentially making napalm due to no drip tray, uneven temps side to side (which is sort of an issue with most or all pellet grills), ash flying everywhere, and apparently the app sucks.

Edit: I want to add that I take everything I see on the internet with a grain of salt and especially Reddit due to the anonymous nature of the website.

Any suggestions for smoking a ribeye? I usually just do it on the charcoal Weber but I’m wanting to smoke one tonight.

Rumor has is that they rushed it through engineering and R/D to get it to market because they underestimated the pellet market and saw how much money they were losing.

Well having WiFi issues again. For some reason, the app on my phone will not recognize the DC WiFi. But I had my girlfriend install it on her phone and bam. Instant connection. I don’t get what’s wrong with the app and my phone. :(

Gonna open this bottle of wine to go with the rib eyes. It was aged in bourbon barrels.

I don’t disagree with that at all. Now that I got my temps dialed in side-to-side, my upper rack, and I just ordered hinges to install a folding shelf on the front my Jim Bowie is even better than when it came out of the box.

Since I have tomorrow off, I’ll be throwing a pork butt on for lunch the rest of the week. Haven’t had pulled pork in awhile and looking forward to it.

They were so damn good. So full now. Couldn’t finish it all which means I’ll be having the leftovers tomorrow morning with a fried egg

Yeah me too, but not going to happen at this point. Going to stick with the Pit Boss and if I do upgrade it will be the Lockhart although waiting on more reviews. @itzyoboipaul suggested the cheap Lowes pit boss on clearance to get my feet wet. And he was right...

Haven't used the Genesis since I got the pellet pooper. So tonight thought I'd use it for sausage quarter pound patties because was cooking smoking on the Pit Boss and didn't have room. But had to make room first and clear snow.

    gasser snow 2.jpg

And already was using the pellet pooper for chicken thighs so I used the Genesis turned to the lowest setting for the sausage patties. Thank goodness Fleet Farm has CCM Hockey Sticks on clearance for 25% right now. Ehh?! Out of practice and turned them into hockey pucks.

    Weelemd 15.jpg

Cheating if you don't show the bad with the good, just saying...

Love my Webers. Right now thinking of what is going to be going off the deck to Craigslist or Facebook. To make room for the Lockhart.

The Lockhart will take care of the gasser and even the WSM as much as it pains me to say it. Think a 26" kettle with a CB roti and Jumbo Joe inside of it along with a Pit Boss Lockhart will take care of all my needs. Kind of wish it wouldn't have taken me 15 or more years to figure it out. Then again 15 years ago most of these options were not available to us.

Supper is almost done. On the pellet shiter.

IMO you can't get there from here with Sous Vide. Long story but the "hippy" that I was dating a couple of years ago asked me to never boil her steak again after I tried SV. Almost went to explain to her that I wasn't boiling it. And then remembered that she told me that she had eaten more bacon and beef in the couple of years since she had met me than she had in her whole life. And she was right. IMO, as whacked as she may have been in many areas. But the sex was damn good especially after I cooked a ribeye or bacon for her. Just saying...

Friend of mine at work is also retired Navy Sr. Chief and when I told him about her he said duh, retired Chief and a hippy what did you expect to happen? He might have been on to something there but then again he is also on his 4th marriage LOL.

Reboot made me smile. I am Level 3 support the guy they keep in the basement and start at 0600 because of Jax Fl. and usually go until 1700 or later because of Phoenix. Fridays normally try to cut out at 1600. Had 6 engineers on the line for a tech troubleshooting meeting on Friday from 2 vendors plus us for integration issues. 10 minutes into the meeting listening to the troubleshooting that had happened I said when was the last time the server was rebooted. They all said good idea but I was already looking at the event log and knew it was a long time. Punting the bitch solved the issue and I was the hero. It was Friday leave me the hell alone.

Moonlight for a IT headhunter supporting his systems from top to bottom. Saturday solved a TCP\IP bandwidth issue for 2 of his workstations including his workstation. I'm on a roll... Maybe can help.

My favorite question for applicants for years was explain the similarities, differences, strengths and weakness of NetBIOS, NETBEUI, IPX\SPX, Appletalk, and TCP\IP. After watching the applicants shit their pants I was told I could no longer ask that question as most protocols were no longer applicable. But it showed how someone handled a shit hits the fan in real life.
