so i've seen a bunch of you guys smoking SPAM. To be honest i've never had it. can you guys give me the quick guide on how you smoke it. i'd be using my Weber Kettle.
ie. thickness of slices, seasoning, temps and how long to smoke, etc. thanks....

Its already cooked. Slice how you like it and throw it on. No need to season.

I personally cut it in to around 1/4”-ish slices and rub it with Meat Massage, but whatever rub you prefer will work. On the grill at 225 for about an hour, flipping halfway through.

Edit: I wouldn’t use a rub with a huge salt content as it’s already quite salty by itself.

Like everything, personal taste prevails so I’m sure everyone does it a little differently. Just gotta experiment and see what works for you.

Thanks for the rub recipe. I bought and extra corned beef yesterday so I might try this next weekend!

As the others said, it's up to your liking. I used too salty of a rub the first time and they were almost inedible. Spicy Pitfaced with it's low salt content was delicious, and have been doing that ever since.

I just slice them about .25" or so and throw them on until they take on a bit of color from the smoke

My first job out of college was with Hormel Foods, so I have insider knowledge of the pink rectangle. The meat is injected with a salty brine, in a tumbler, before being plopped in a can, and slid into a chain, in a cooker that stands 7 stories tall.

And no, I don't eat that :censored:.

No. We ate it when we were growing up, but that stopped when I started buying my own groceries. In 1979.

I agree with all who have stated the salty nature of Spam, try the Spam Lite. Way less salty and less calories as well, I actually prefer it to the regular. I usually sprinkle Tony Chachere's Creole seasoning on mine.

Did someone say SPAM?! I like to score it deep and then pour a little pineapple juice on it then top with brown sugar. I like ABT's with my SPAM too.

Don't think I grasped just how much of a beast this thing is, I am happy very happy :D

Wasn't sure the vortex would be able to handle the larger size but doesn't look like it will be a problem. Now I can really do some wings, lots of them. Have to work later tonight so will have to wait until tomorrow. When the rain and then snow storm hits :pout:

Also, don’t be afraid to try the Wally World Great Value brand Spam, in the lite version it’s my very favorite and considerable less in price. That Threet shit I wouldn’t feed my dogs.

Not a treet fan either. The Aldi Spam is just as good as the original. I don’t think they have a Lite version though.

Damn I'm :jellydance: I've been wanting a 26" since I learned to properly use my 22". Trying to figure out how I can convince the wife that buying another grill is a required expense.

The 26 is a game changer... But that's not even it's final form...

Before I even ordered it checked out the CB website for the 26" rotisserie :anonymous: I have 3 of them now and 3 motors so could get by with the $199 option. But will wait if I do it. Yeah you know me too well Rick, it will happen eventually :p

I have 3 22" kettles. One is in the garage for the cabin during hunting season and 2 on the deck. My original gold is in hot standby on the deck to be dragged out back to the firepit area when the snow gets lower. But will never use it out there. Did that with a Weber silver 20 years ago and between the snow and mosquitoes never used it so finally gave it away. Reason for so many decks off the 2nd floor here, the State bird is the mosquito. Lot less of them up high. I got the 26 as much for smoking as anything else. A man can never have too many grills. Of any type!

LOL my first thought when I went to lift the lid was holy chit this thing is heavy! So what does the lid on the Ranch feel like?! :D

Butcher shop in town had ribeye rolls go on sale for $5.99 a lb. today. Trying to stay away from Costco so picked up one this morning. If it was good would get another tomorrow but didn't have high expectations.

Been using the pellet pooper as a replacement for the gasser during the winter. And today had an inch of rain. Didn't want to mess with pellets in the rain or charcoal. Temps dropping to a high of 20 tomorrow and snow tonight. Screw that even the dog said so.

    butchShop1Rain.jpg

So used the gasser for the first time in a long time. Did sear and slide as I didn't want to dork around in the rain too much and honestly don't see a hell of a lot of difference. Not near as much as the cut of meat does.

    butchShop2StartSear.jpg

    They looked good enough.

    butchshop3finishing.jpg

But the dog ended up with about 25% of it due to the tendons and what I consider inedible meat. He is happy with them LOL. Looks like I will be making a trip to do battle at Costco this weekend although have a dozen ribeyes for now that need eaten. I got a small roll as a trial run, hey I didn't fall off the turnip truck last night after all ;)
