    Ya they can be be whacky. Part of it is you never know how it was treated and that can kill the yeast. Try some good hearty yeast.

    1 pack... So 70 grams??? I dunno it proved about 40 mins the first time and then I split it into 2 loaves and let it prove another 45 mins or so. It nearly doubled both times. I think the glass bread pan hurt me some. It didnt quite get done in the middle... Its pretty cakey but that could be from a number of things now haha

    2.25 tsp ;) should have been enough to get it to rise good. temp to rise needs to be about 75-80.

    I am so glad I stumbled onto this gem of a thread today. I enjoy baking bread but don’t do it near as often as I should (work schedule kinda sucks). I will definitely be trying some of these recipes and buying a book or two for sure. When I get home I will post a fantastic Italian white bread that is as simple as it gets. Makes two good sized loaves and takes hardly any time at all. Glad to see fellow taco enthusiasts getting down with some baking!

    I mis-remembered earlier. This is a French bread not Italian. My grandmother found this recipe years ago in the local newspaper and it’s outstanding, especially for the amount of effort and time it requires. It’s a little denser type of white bread (and makes fabulous French toast) but it’s great. If it’s just for my wife and I, I cut the recipe in half. In less than 2 hours total time (takes about 45 minutes to raise) you have a wonderful homemade bread to share. I always butter the outside after it comes out to keep it softer. I have tried to make these into perfect looking loaves but have found through much trial and error that the less you mess with forming the loaf, the better the outcome.

    I made some sourdough waffles for the kids with the same starter I use for bread. Had the starter handed down to me from my Mom. No idea on actual age of it but I know for sure it is over 50 years old and from a woman in Kotzebue, AK

    Yeah, My Mom got it from her best friend that lived way out in Kotzebue for a long time. She grabbed it from an Inuit lady in 1975 and knows she had it for a long time before that. Wish I knew the actual start date.

    I just broke off a few more jars for some friends during this lockdown. Dropped off some jars on their front steps to spread a little love during this crap and they’re making pancakes and waffles for their kids now. Love watching it spread like that!

    had to throw out or rather wife threw out my starter, it wasnt real old but it got tossed in our move:(
