    Booze is a garden variety Pinot. Dutch oven in the oven for a slow and steady, gentle heat. 3 hours later?

    "Getting out of hand" - Wife
    Alright, I’m going with this one.

    Garlicky chicken with “crash” potatoes and asparagus.

    Made a rub of olive oil, minced garlic, salt, pepper, paprika, basil, oregano and parsley. Rubbed chicken a few hours in advance and cooked on the kettle for a while (I don’t remember how long lol) around 375. Skin turned out crispy in some parts, but think I’ll stick to dry rubs from now on. Asparagus are just olive oil, salt, pepper, garlic powder. Crash potatoes are a recipe my wife found forever ago and they’re delicious. Boil red potatoes, smush em down. Coat in olive oil, garlic, salt, pepper and rosemary and stick in the over at 450 until it gets a bit crispy. Beer is just to keep me hydrated after a late Saturday night :rofl:

    Lol, yeah that was last Friday night. I just happened to snag a few pics. I just saw this thread. The Kona Ice truck just happened to be creeping the hood because they can’t really do any carnivals or fairs right now so they hit the road. I live way out in the sticks so it was pretty cool to see something besides the Schwans man slinging ice cream on our road.

    So my wife went to the store I ask for a tri-tip (for Easter/this contest) but all they had was waygu at $20/#. I told her I’d look later in the week.

    I went back and found prime rib at $5.99/lb!

    I really like prime rib (standing rib roast) but have only cooked it on special occasions because it tends to be pricey.

    Then I found it cheaper than tri-tip!

    Also never smoked one.

    Started off with two ribs. Then a simple SPOG rub over night. Then onto the kettle.

    Started out for the first hour without monitoring but I got nervous. So I pulled out the probes.
