    And we’re done! Came out just right. I highly recommend the reverse sear method if you’ve never tried it!! And a little butter on top as they rest.

    Almost the only way I’ve done em for the past 5-6 years now. Should try making some compound butter with garlic and chives, little scoop on top and let that melt.

    Steaks look awesome nice work.

    well... it appears that we are about to be a the owners of a new rottweiler puppy. Found a breeder with AKC German bloodline rotties. Pups are 9 days old, and we put a deposit down for pick of the Females in the litter. should be coming home first part of June

    I’m sure others here can answer better than me but basically you cook the steak indirectly at ~225 until it reaches the desired internal temp which for me is 140. Once you reach the IT you like you throw them on a nice hot open flame for a minute or so per side and it it gives them a nice little crust. Basically it allows you to cook them without drying them out. At least this is what I do and my understanding of reverse sear.

    I've got masks coming from a few different people, from all over and just found two more I want. I think I have a problem. Of all the masks ordered and that people are sending to me over the past couple weeks. Not one has made it to me, yet! So I still have to wear a crappy one tomorrow!!! :annoyed::laugh:
