    I was think it’s why he is working all this OT. So hopefully he doesn’t have to take out a 2nd mortgage to finance the WiFi upgrade.

    made some ribs over the weekend. First time doing ribs on the smoker so was a trial and error. We enjoyed them, smoked for 4hours then slathered it in sauce and threw back on. Could have let the sauce tighten up a little more but we got impatient and hungry and the ribs hit temp so we couldnt wait anymore. Never had any ribs fall off the bone like these did.

    18 hours in. 185 internal. Put in foil pan and covered for the last leg to catch some renderings. Barq is insane. Flaky though in spots but will mix in well.

    Hitting Costco later to see if any meat exists there. This was a deep freezer find.

    Pizza sounds great too! I need to make some dough and try some pulled pork pizza soon.

    Misspoke earlier. That was 17 hours apparently. I can't math :D

    Now it's done. 18h 15m total. Vented for a few then rewrapped and into cooler. Smell is off the charts good! Pepper for days. :bananadance:

    Got some steaks on for their smoke portion of reverse sear. Hopefully about another 20 minutes or so of smoke then the temps get cranked up.

    Steaks are done and been eaten. If it wasn’t so cold out I would have put them on to smoke a lot longer.

    Hands down one of my best butts! Barq was insane. Shredded like soft butter by hand with lined gloves. The barq added some nice kick of flavor to the bite. Not spicy, but noticeable. The wife approved.

    Next project... Tamales from this pork! Wish me luck!
