    I suppose this entire thing could be made in a crock pot too overnight? Or is that too long on the cook for the meat?

    It can, and time is what you want. I cook mine on top of the stove for about 4 hours on low heat. You want the meat to be real flakey, just like shredded beef.

    Well, I have a digital crock pot with a lid that locks down and a vent hole. On low it will break down anything overnight. I also have a very competent blender to make the sauce pure liquid.

    I'm buying some red onions today and put those, some julienne carrots, and sliced radish into my spicy pickle juice reserve that I keep on hand. I like the idea of that on the tacos. I'm also going to increase the broth amount to double it so I can have some of this on hand for shrimp and fish tacos.

    I need more cilantro!!!!!!! And tequila!!!!!!

    Another technique, chop the birria meet up, add some broth to it just before you drop it in the tortillas. For those that like cilantro, this is an amazing dish, and for those that don't like cilantro, add whatever you want, it is so rich and full of different flavors. I ate 9 of them last time I cooked them up and got drunk on birria tacos. Just zoned out in the couch for the rest of the night.

    Yea, I can tell by the list of ingredients that this is a very complex flavor profile. I'm going to try to find fresh versions of everything first. I keep cans of chipotle on hand. Peppers are pretty easy to find, even here on the east coast. There are a lot of ethnic markets here.

    I may even have to plant some cilantro again. This time I will cover the hill in my back yard. I found out last summer that cilantro can be frozen.

    I have plenty of beef, I either add beef ribs or just beef bones. My Butcher just gives them to me. Try to get a bone in chuck roast. You pay more, but it's worth it.

    If your blender doesn't completely chop up the chilies, pore it through a strainer or you will end up with chile skin pieces in your broth. Good luck.
