    Salad Nicoise. Gluten free and also copacetic with the diet my wife follows, mmm FODMAP.

    Traditional meal in the south of France, fresher is better, but bad not to make at home. A bajillion variations online. I do potato wedges with olive oil, salt and rosemary on parchement paper in the indoor oven. Big pot blanching for green beans. Hard boiled eggs, shelled and quartered. Cherry tomato. I like Castelvetrano olives here though they are not entirely authentic they taste good. I can get the olives at Krogers in Faribanks, Alaska, they can't be that hard to find down south.

    The French, gobsmacked I am, use canned tuna here. I am speechless. Also, the vinagrette can be troublesome for dietary needs. What I do instead is reverse sear a ribeye (tri tip would work too) for each two salads, carve it to bite sized chunks in the kitchen. Use the ribeye instead of canned tuna, and the pan drippings as dressing.

    Excuse my ignorance, “mmm FODMAP”?

    My BIL originated from France, 2nd gen. I’m excited to try this, it sounds incredible. My wife is anemic, has type 1, and celiac, who knows what else? We’re always excited to try new cuisine, thanks for adding.

    Gluten Free Large Batch Ranch Seasoning Mix


    • 3/4 cup dried parsley
    • 3 tbsp dried dill
    • 2 tbsp dried chives
    • 1/4 cup granulated garlic
    • 1/4 cup granulated onion
    • 1/4 cup dried onion flakes
    • 2 tbsp smoked Kosher salt
    • 2 tbsp restaurant grind black pepper
    Mix all in a wide mouthed pint Mason jar (Short fat jar to allow measuring spoon to reach the bottom of jar) and shake to mix well.

    2 tbsp = 1 ranch seasoning packet

    Use on anything from mixing with sour cream to make Ranch Dip to sprinkling on french fries or tater tots and everything in between.

    Gluten Free Large Batch Taco Seasoning

    • ½ cup plus 2 tablespoons chili powder (GF varieties are out there)
    • 2 1/2 teaspoons granulated garlic
    • 2 1/2 teaspoons granulated onion
    • 2 1/2 teaspoons red pepper flakes
    • 2 1/2 teaspoons oregano
    • 5 teaspoons paprika
    • ¼ cup plus 1 tablespoon cumin
    • 1 1/2 tablespoons Smoked Kosher salt (more to taste)
    • 3 tablespoons + 1 teaspoon restaurant grind black pepper
    Mix all in a wide mouthed pint Mason jar (Short fat jar to allow measuring spoon to reach the bottom of jar) and shake to mix well.

    Mix 1/2 cup water to 2 Tablespoons seasoning mix for 1 pound of ground meat (pork beef chicken turkey) or canned chicken breast.

    Brown ground meats and drain then add water and seasoning and increase heat and cook until water is absorbed/evaporated.

    Excellent work, any preferred seasoning brands that are certified? I cook a lot and my biggest pain was finding gf spices. My wife (celiac) reaps all the benefits :rofl:

    I buy all my bulk stuff at Sam's Club and they sell Tone's seasonings and spices but I cannot find evidence that their chili powder is gluten free. All their single ingredient things say GF on the label and things like their Cajun Seasoning Blend says GF as well.... I don't have a good answer right now on the chili powder.. but as for the recipes themselves.. I've been using both for years now and it's WAY better than store bought stuff.

A little hard to find - can go weeks at the local store with empty shelves - so I stock up when I can. Lots of recipes that I had to give up w/o it. they also have cream of mushroom and tomato

    Been GF for 10 years now. Cant believe what a difference it made. All tests came back inconclusive but the change in my overall health was night and day. Never going back to a regular diet.

    I look forward to the buffet here :hungry:

    Welcome, pal! Most recipes can be altered, but my goal is to be as specific as possible because that’s what it takes. I hate seeing my wife in excruciating pain over a simple mistake, so here we are!

    i dont really do cream of mushroom. the only one i know of is the walmart one but i've never tried it. sorry...

    my go-to for easy recipes is actually bettycrocker.com. they have a great search function and can weed out all the regular recipes. great if you aren't super familiar with GF cooking and baking or if you just want to try something new but also want to stick to minimal ingredients and main stream brands.

    skip the bread crumb topping (I like prepacked parmesan crisps instead) and leave the GF pasta on the side or it soaks up too much liquid and you can sub out any brands they mention with something youre more familiar with so long as the quantity is roughly the same
